I have to be honest with you, The Farmer and I are not morning people. Shocker, since we are usually up before the sun is, but let me tell you we both run to that coffee pot to get us going. We usually don't have much time to make breakfast and The Famer had been taking a tupperware container full of cereal to eat in the office while looking through the computer. So, I decided to make hime something different in the morning without taking too much time to make. That, my friends, are frittata cups. Sounds fancy, right? Well they are perfect little egg goodness! We have had plenty of eggs lately and I had some vegetables in my refrigerator that needed to be used up, so I made up a large batch and froze them. I take a bag of six out at a time to thaw in the fridge, and all we have to do in the morning is pop them in the microwave for 45 seconds and boom, a gormet breakfast! Feel free to add whatever vegetables you have on hand or prefer.
1/2 cup milk
1 lb. pork sausage
1 red bell pepper, diced
1 1/2 cup spinach, chopped
1/2 large onnion, diced
1/2 cup shredded cheddar cheese
Preheat oven to 375. Brown pork sausage, drain and set aside. Scramble eggs with milk and add sausage, vegetables and cheese. Mix together. Grease muffin tin and fill cups 3/4 full of egg mixture. Bake for 20-25 minutes until centers are set. Test doneness with a toothpick. Let cool completely before storing.
Store in airtight container in refrigerator for up to a week, reheat in microwave for 45 seconds to 1 minute OR individually wrap in plastic wrap and place in a zip lock bag. Freeze for up to a month. Let thaw in refrigerator overnight. Remove plastic wrap and reheat in microwave.
