The last veggies from my local farm stand are beginning to look sad in my refrigerator. It would break me if I had to throw them in the compost, so they needed to be used up and Mama had to get dinner on the table FAST for some hungry farmers.
I used what ingredients I had on hand, but feel free to change it up with what you have!
One Pot Fall Pasta
1/2 pound pasta
2 tablespoons butter
1 medium leek, diced
1 squash peeled, cored, cubed
4 chicken breast, cooked, cubed
2 garlic cloves, minced
1/2 bunch kale, chopped
1/4 cup pasta water
Preheat oven to 400.
Cook pasta according to directions, toss in olive oil and set aside. Reserve 1/4 cup water. Coat squash with olive oil and season with salt and pepper to taste. Bake for 20 minutes or until tender. In a Dutch oven, melt butter and sauté leeks until tender. Add garlic and cook until fragrant, about 30 seconds. Add pasta water and deglaze the pan. Add kale and sauté until wilted. Toss in pasta, chicken and squash. Serve!
